My voice memos disappeared from my iPod.

When you sync your iPod, iTunes will open by default. Your voice memos will appear in the Voice Memos playlist in iTunes. Back on your iPod, the voice memos will have moved from Extras > Voice Memos to Playlists > Voice Memos.
