Does iTalk Pro have any sort of input gain control?

Yes. Depending on the microphone you're using, you may want to change the automatic gain control to low or high. To change this setting, press and hold the iTalk button for a few seconds and let go. A screen will appear on your iPod that will let you change your gain setting by tapping the iTalk button. Press and hold the iTalk button again for a few seconds to confirm the selection.
